Chocolate bark is one of those recipes that looks like it came from a fancy confectionery but is completely achievable at home with just a handful of quality ingredients. The combination of rich dark chocolate, creamy white chocolate swirls, crunchy almonds and pistachios, chewy dried cranberries, and a finish of flaky sea salt hits every note — salty, sweet, nutty, and deeply chocolaty all at once. Many store-bought chocolates and confections sneak in gelatin as a stabilizer or glaze, making it genuinely tricky to find something this indulgent that's completely free of animal-derived setting agents. Here, the only ingredients doing the work are real chocolate, nuts, fruit, and salt — nothing hidden, nothing questionable. The tempering process — melting, seeding, and cooling the chocolate to the right temperature — is what gives each piece that satisfying snap and glossy sheen you'd expect from a professional chocolatier. Breaking the finished slab into rustic, jagged pieces by hand is honestly half the fun, and the marbled swirl pattern means every piece looks a little different. This is the kind of treat you'll want to wrap up as a gift or keep entirely to yourself — both are valid choices.

Line a large rimmed baking sheet with parchment paper and set aside. Divide the chopped dark chocolate into two portions: set aside about one-quarter (3 oz) in a separate small bowl, and place the remaining three-quarters (9 oz) in a heatproof bowl.
Set the heatproof bowl with the 9 oz of dark chocolate over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water. Stir frequently until the chocolate is fully melted and smooth, and registers 115–120°F (46–49°C) on an instant-read thermometer.
