Rich, glossy, and loaded with texture, this chocolate bark is the kind of treat that looks like it came from a fancy confectionery but comes together entirely in your own kitchen. Dark chocolate is tempered using a classic seeding method — melting most of it down, then stirring in reserved chopped chocolate to bring the temperature to that perfect snappy range — so you get a professional-quality finish without any special equipment. A drizzle of white chocolate gets swirled into a marbled pattern before roasted almonds, pistachios, and dried cranberries are scattered across the surface, with flaky sea salt finishing everything off. The whole thing is naturally free of eggs, which means there's no need to swap or substitute a single thing — the recipe just works as written. Chocolate bark can sometimes hide surprising additives in store-bought versions, so making it at home gives you full control over every ingredient that goes in. Once it sets and you crack it into jagged, rustic pieces, it's almost too pretty to eat — almost.

Line a large rimmed baking sheet with parchment paper and set aside. Divide the chopped dark chocolate into two portions: set aside about one-quarter (3 oz) in a separate small bowl, and place the remaining three-quarters (9 oz) in a heatproof bowl.
Set the heatproof bowl with the 9 oz of dark chocolate over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water. Stir frequently until the chocolate is fully melted and smooth, and registers 115–120°F (46–49°C) on an instant-read thermometer.
