Rich, snappy chocolate bark is one of those treats that looks like it came from a fancy confectionery but is genuinely straightforward to make at home. The combination of deep, bittersweet dark chocolate swirled with creamy white chocolate creates a marbled finish that's as beautiful as it is delicious. Roasted almonds and pistachios add a satisfying crunch, dried cranberries bring a pop of chewy sweetness, and a final scatter of flaky sea salt ties everything together in the best possible way. The tempering process — melting most of the chocolate, then stirring in reserved chopped pieces to bring the temperature down — is the secret behind that glossy surface and satisfying snap when you break it apart. Many store-bought chocolate treats sneak in citrus oils or natural flavors derived from orange or lemon, so making your own from scratch puts you fully in control of every ingredient. Every component here is straightforward and free from citrus in any form, so you can gift it, snack on it, or serve it at a party without a second thought. Once it sets and you crack it into jagged, gorgeous pieces, it's genuinely hard to believe something this impressive came together so easily.

Line a large rimmed baking sheet with parchment paper and set aside. Divide the chopped dark chocolate into two portions: set aside about one-quarter (3 oz) in a separate small bowl, and place the remaining three-quarters (9 oz) in a heatproof bowl.
Set the heatproof bowl with the 9 oz of dark chocolate over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water. Stir frequently until the chocolate is fully melted and smooth, and registers 115–120°F (46–49°C) on an instant-read thermometer.
