Place the chicken in a large pot and cover with cold water by 2 inches. Add 1 tsp salt and 1/2 tsp black pepper. Bring to a boil over high heat, then reduce to a steady simmer and cook until the chicken reaches 165°F (74°C) at the thickest part not touching bone, about 20–25 minutes. Transfer the chicken to a cutting board and reserve 1 cup of the poaching broth. Once cool enough to handle, remove and discard the skin and bones, then shred the meat into bite-sized pieces.
