Buttery, golden, and impossibly soft, this brioche is the kind of bread that makes you want to clear your whole Saturday morning just to bake it. The dough is built entirely from flour, eggs, butter, milk, sugar, and yeast — not a trace of beef, lamb, or any other red meat anywhere in the recipe, which makes it a genuinely worry-free bake for anyone managing a red meat allergy. That might sound obvious for a bread, but plenty of enriched doughs and store-bought brioche products are processed on shared lines or finished with animal-derived glazes that can be harder to vet. Here, the egg wash is simply egg and milk, so you know exactly what's going on that gorgeous mahogany crust. The overnight cold fermentation is the real secret weapon — it firms up all that butter and builds a depth of flavor that a same-day loaf just can't match. When it comes out of the oven and you tap that domed, deeply browned top, you'll understand why brioche has a reputation for being worth the effort. Slice it thick, toast it lightly, or just tear into it warm — it's pure, uncomplicated comfort.

Combine the warm milk, yeast, and 1 tbsp of the sugar in the bowl of a stand mixer. Stir briefly and let stand for 5–10 minutes, until foamy and fragrant.
Add the flour, salt, remaining 1 tbsp sugar, and the 4 room-temperature eggs to the yeast mixture. Mix on low speed with the dough hook until a shaggy dough forms, about 2 minutes, then increase to medium speed and knead for 8–10 minutes, until the dough is smooth, pulls cleanly away from the sides of the bowl, and passes the windowpane test — a small piece stretched between your fingers should stretch thin enough to see light through without tearing.
