Chef's tip
Turkey bacon is leaner and cooks faster - watch it closely and add a little oil if needed.
4 slices white sandwich bread
3 tbsp mayonnaise
1 large ripe tomato, cut into ¼-inch slices
4 leaves romaine or iceberg lettuce
salt and pepper, to taste

Instructions

1
Lay the bacon strips in a single layer in a large skillet or griddle over medium heat. Cook, turning once, until the fat is rendered and the bacon is deep golden-brown and crisp, 7–9 minutes total. Transfer to a paper-towel-lined plate to drain.
2
Toast the bread slices until golden and firm at the edges.
