Few cocktails hit as hard as a mojito built entirely from scratch, and this blackberry version is genuinely stunning β deep purple, ice-cold, and bursting with fresh fruit and mint. The fizz comes from plain sparkling water, which means you sidestep the thickeners and stabilizers that sneak into many commercial mixers and flavored sodas. Carrageenan, a common additive in some bottled drinks and dairy-based cocktail ingredients, has no place here β every component is whole, recognizable, and clean. Fresh blackberries get muddled right in the glass with mint leaves, releasing that gorgeous jewel-toned juice and a fragrance that makes the whole kitchen smell like summer. A quick homemade simple syrup takes only a few minutes on the stove and lets you control exactly what goes into your drink. Lime juice, white rum, and chilled sparkling water round everything out into something that looks like it came from a craft cocktail bar but comes together with almost no effort. Serve it immediately while the ice is still sharp and the bubbles are still lively β it's that kind of drink.
