Béarnaise is one of those sauces that feels almost impossibly luxurious — glossy, buttery, and perfumed with fresh tarragon in a way that makes everything it touches taste like a special occasion. The technique here is classic and methodical: a sharp white wine and vinegar reduction built with shallots and tarragon forms the flavor backbone, and then warm clarified butter is whisked in drop by drop until the sauce turns thick, velvety, and rich. Clarifying the butter first is the move that makes it all come together cleanly, removing the milk solids so the emulsion stays stable and the flavor stays pure. Pasteurized egg yolks are used and cooked to 160°F over a double boiler, so you get that silky, custardy body without any food-safety guesswork. A finishing hit of finely chopped fresh tarragon and optional chervil keeps the sauce bright and herbaceous rather than heavy. Every single ingredient here is naturally free of shellfish and ocean-derived products — no hidden seafood stocks, no Worcestershire shortcuts, nothing to second-guess. Spoon it over a perfectly seared steak, roasted asparagus, or poached chicken and watch it disappear.

Clarify the butter: melt the butter in a small saucepan over low heat until the milk solids sink and the foam subsides, about 8–10 minutes. Skim the foam from the surface, then carefully pour the clear golden liquid into a heatproof measuring cup, leaving the white milk solids behind. Keep warm.
Make the reduction: combine the white wine vinegar, white wine, shallots, roughly chopped tarragon, and cracked black pepper in the small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons, 4–5 minutes. Strain through a fine-mesh strainer into a heatproof bowl, pressing the solids to extract all the liquid; discard the solids.
