Béarnaise is one of those sauces that turns a simple piece of steak or roasted vegetables into something genuinely special — buttery, herbaceous, and just tangy enough to make every bite interesting. The beauty of making it from scratch is knowing exactly what goes into it: clarified butter, egg yolks, a sharp white wine and vinegar reduction, and bright hits of fresh tarragon and chervil. No packaged shortcuts, no mystery sweeteners, just clean, classic French technique. That reduction — white wine vinegar, dry white wine, shallots, and cracked pepper simmered down to a concentrated couple of tablespoons — is where all the depth comes from before the yolks even hit the bowl. The slow, steady drizzle of warm clarified butter into the thickened yolks is what builds that silky, spoonable texture that clings perfectly to whatever you're serving. Because every ingredient here is whole and unprocessed, you never have to second-guess a label or wonder if a sneaky additive crept in. It takes a little patience and a watchful eye on the heat, but the result is a restaurant-quality sauce that belongs entirely in your own kitchen.

Clarify the butter: melt the butter in a small saucepan over low heat until the milk solids sink and the foam subsides, about 8–10 minutes. Skim the foam from the surface, then carefully pour the clear golden liquid into a heatproof measuring cup, leaving the white milk solids behind. Keep warm.
Make the reduction: combine the white wine vinegar, white wine, shallots, roughly chopped tarragon, and cracked black pepper in the small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons, 4–5 minutes. Strain through a fine-mesh strainer into a heatproof bowl, pressing the solids to extract all the liquid; discard the solids.
