Classic béarnaise is one of those sauces that turns a simple steak or roasted vegetable into something genuinely special — rich, buttery, and bright with the anise-like perfume of fresh tarragon. The beauty of making it from scratch is knowing exactly what went into the bowl: real shallots, dry white wine, white wine vinegar, and fresh herbs, with zero need for flavor packets or shortcuts that sneak in synthetic additives. The process starts with a fragrant reduction that gets strained down to a concentrated couple of tablespoons, building a clean, complex base before a single drop of butter is added. From there, pasteurized egg yolks are whisked over gentle heat until thick and safe, then the warm clarified butter goes in drop by drop until the sauce turns glossy and spoon-coating. Finishing with finely chopped fresh tarragon, optional chervil, and a squeeze of lemon keeps every flavor note honest and herb-forward. It does take a little patience and a watchful eye on the heat, but the result is a silky, restaurant-quality sauce made entirely from real, recognizable ingredients.

Clarify the butter: melt the butter in a small saucepan over low heat until the milk solids sink and the foam subsides, about 8–10 minutes. Skim the foam from the surface, then carefully pour the clear golden liquid into a heatproof measuring cup, leaving the white milk solids behind. Keep warm.
Make the reduction: combine the white wine vinegar, white wine, shallots, roughly chopped tarragon, and cracked black pepper in the small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons, 4–5 minutes. Strain through a fine-mesh strainer into a heatproof bowl, pressing the solids to extract all the liquid; discard the solids.
