Deeply charred eggplant is the whole point here, roasted until it collapses into smoky, tender flesh that practically falls off the skin. Blended with roasted garlic, nutty tahini, and a good hit of fresh lemon juice, it turns into a creamy dip with just enough texture to feel rustic rather than pureed smooth. A pinch of cumin adds warmth, and the finishing drizzle of olive oil with a dusting of smoked paprika makes it look as good as it tastes. Every ingredient here is naturally plant-based, so this one slots easily into a vegan spread without any extra thought. Scoop it up with warm pita, crisp vegetables, or crackers, and it's the kind of dip that disappears fast at any gathering.

Position a rack in the upper third of the oven and preheat to 450°F (230°C). Line a baking sheet with foil. Halve the eggplants lengthwise, brush the cut sides with 2 tbsp of the olive oil, and place cut-side down on the prepared baking sheet. Nestle the unpeeled garlic cloves alongside.
Roast until the eggplant skin is deeply charred and collapsed and the flesh is completely tender when pierced with a fork, 35–45 minutes. The garlic cloves should feel soft when pressed. Remove from the oven and let everything cool on the pan for 15 minutes.
