In a large bowl or the bowl of a stand mixer, combine the warm milk, 2 tbsp granulated sugar, and yeast. Let stand for 5–10 minutes, until the surface is foamy and the mixture smells yeasty.
Add the melted butter and vanilla extract to the yeast mixture and stir to combine. Add the flour and salt, then mix with a dough hook on medium speed (or stir with a wooden spoon and knead by hand) for 6–8 minutes, until the dough is smooth, slightly tacky, and pulls cleanly away from the sides of the bowl.
