Sweet potatoes have never looked this good. Thinly sliced and baked until golden at the edges, these chips hit that perfect sweet-and-warm-spice note that makes it nearly impossible to stop at just one handful. Ceylon cinnamon is the real star here ā it's softer and more floral than the cassia variety you usually find on store shelves, and it pairs beautifully with the natural sweetness of the potato. Coconut oil keeps everything crispy and adds a subtle richness without weighing the chips down, and a drizzle of honey takes them somewhere almost dessert-like if you're in the mood. The mandoline trick and the pat-dry step are what separate genuinely crispy homemade chips from the sad, bendy kind ā don't skip either. They come out of the oven still a little soft, but a few minutes on the wire rack and they firm right up into that satisfying snap. Perfect for snacking, lunchboxes, or just standing over the cooling rack pretending you're going to save some for later.

Preheat the oven to 375°F (190°C). Line two large baking sheets with parchment paper and set a wire cooling rack over one of them if you have one.
Using a mandoline set to 1/16-inch thickness, or a sharp knife, slice the sweet potatoes into rounds as uniformly thin as possible. Pat the slices dry with paper towels ā the drier the slices, the crisper the chips.
