This oven-baked beauty puffs up dramatically in a hot skillet, filling your kitchen with the warm, spiced scent of Ceylon cinnamon and cardamom before you've even taken a bite. Mashed sweet potato gets folded right into the batter, giving each wedge a naturally creamy texture and a subtle earthiness that makes it feel more substantial than a typical weekend pancake. The whole thing bakes at high heat for about 20 minutes, so there's very little hands-on effort once the batter comes together — and it serves four, making it an easy choice for a relaxed morning with company. Eating with histamine sensitivity often means giving up the fermented, aged, or processed ingredients that sneak into so many breakfast recipes, but every component here is fresh and straightforward. Eggs, milk, flour, coconut oil, and butter form the base, while maple syrup adds just enough sweetness without any of the vinegars, preservatives, or flavor enhancers that can cause problems. A dusting of powdered sugar or an extra drizzle of maple syrup at the table keeps the finishing touches just as clean and simple as the rest of the dish. It's the kind of recipe that feels indulgent without requiring any compromises.

Some low histamine plans avoid cinnamon, but cinnamon doesn't actually contain histamine. This recipe only uses about 1/4 teaspoon per serving. If you prefer to always avoid true ceylon cinnamon, please tap it and change its rating to Red.

Preheat the oven to 425°F (220°C). Place the sweet potato cubes in a small microwave-safe bowl with 2 tbsp water, cover loosely, and microwave on high for 4–5 minutes until completely tender when pierced with a fork. Drain any remaining water, then mash the sweet potato with a fork or potato masher until smooth. You should have about ½ cup mashed sweet potato.
In a large mixing bowl, whisk together the eggs, milk, maple syrup, Ceylon cinnamon, cardamom, and salt until smooth. Add the flour and whisk until the batter is lump-free and pourable. Fold in the mashed sweet potato until evenly combined.
