Bright, herby, and impossibly creamy, this white bean dip is the kind of thing you'll want to put out every time people come over — and then quietly eat the leftovers straight from the bowl. Cannellini beans blended with fresh cilantro, lime juice, garlic, and a touch of cumin and turmeric create a dip that's bold and vibrant without relying on any warm spices that might sneak in unwanted. For anyone navigating spice sensitivities, this recipe is refreshingly straightforward — every ingredient is right there in plain sight, with zero hidden seasonings to second-guess. The food processor does most of the heavy lifting, and a little water added gradually is all it takes to get that thick, scoopable consistency that holds up beautifully against a platter of crisp carrots, cucumber spears, bell pepper strips, and broccoli florets. A final drizzle of good olive oil and a scatter of fresh cilantro make it look like something from a restaurant spread, even though it comes together in minutes. It's the kind of crowd-pleasing dip that disappears fast — so you might want to double the batch.
