This bright, herby dip is the kind of thing you make once and then find yourself craving every time you need a snack or a party spread. Cannellini beans get blended with fresh cilantro, lime juice, garlic, and a touch of cumin and turmeric until the whole thing is silky smooth — think hummus, but with a zesty, garden-fresh personality. One reason store-bought dips and spreads can be tricky is that carrageenan shows up as a thickener or stabilizer in a surprising number of packaged products, including some bean-based dips. Here, the creaminess comes entirely from the beans themselves and a generous pour of olive oil, so there's nothing hidden in the ingredient list to second-guess. A little water added gradually while the food processor runs is all it takes to dial in that perfect scoopable consistency. The rainbow of carrot sticks, cucumber spears, red bell pepper strips, and broccoli florets alongside makes this feel like a full snack board without much effort at all. It's clean, colorful, and genuinely delicious — the kind of recipe that earns a permanent spot in your rotation.
