2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
⅓ cup extra virgin olive oil, plus more for drizzling
3 tbsp fresh lime juice (from about 2 limes)
2 cloves garlic, peeled
1 cup fresh cilantro leaves and tender stems, loosely packed
½ tsp ground cumin
¼ tsp ground turmeric
½ tsp salt, plus more to taste
¼ tsp black pepper
2–3 tbsp water, as needed to thin
For the veggie dippers
2 medium carrots, peeled and cut into sticks
2 medium persian cucumbers, sliced into spears
1 medium red bell pepper, seeded and sliced into strips
1 cup broccoli florets
For serving
1 tbsp extra virgin olive oil, for drizzling (optional)
1 tbsp fresh cilantro, roughly chopped, for garnish (optional)
pinch of red pepper flakes, for garnish (optional)
Instructions

Add the garlic to the bowl of a food processor and pulse 4–5 times until finely minced.

Add the drained white beans, olive oil, lime juice, cilantro, cumin, turmeric, salt, and black pepper to the food processor. Process for about 1 minute, scraping down the sides once, until the mixture is mostly smooth.
