1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
1 large avocado, pitted and diced
⅓ cup raw pumpkin seeds (pepitas)
½ cup cherry tomatoes, halved
For the dressing
3 tbsp extra-virgin olive oil
3 tbsp fresh lime juice (from about 2 limes)
½ cup fresh cilantro leaves and tender stems, finely chopped
1 small garlic clove, finely grated or minced
1 tsp raw honey
½ tsp ground cumin
¼ tsp fine sea salt
¼ tsp black pepper
1 pinch red pepper flakes (optional)

Place the sliced kale in a large mixing bowl and sprinkle with 1/4 tsp salt. Using clean hands, massage the kale firmly for 1–2 minutes until the leaves darken, soften noticeably, and reduce in volume by about half.

In a small bowl or jar, whisk together the olive oil, lime juice, cilantro, garlic, honey, cumin, salt, pepper, and red pepper flakes, if using, until the dressing is uniform and slightly emulsified.
