Colorful, nourishing, and packed with ingredients that genuinely support a breastfeeding body, this skillet hash is the kind of meal that feels indulgent while quietly doing a lot of good work. Sweet potatoes bring complex carbohydrates and beta-carotene, eggs deliver high-quality protein and choline, and the olive oil helps your body absorb all of those fat-soluble nutrients — every component earns its place in the pan. The cumin, smoked paprika, and turmeric layer in warmth and depth without overwhelming the dish, so it works just as well at breakfast as it does for a quick dinner when you're running on little sleep. Cooking the eggs directly in the hash means fewer dishes and a built-in protein boost in every serving, which is exactly the kind of efficiency new parents need. A squeeze of fresh lime juice and a handful of cilantro at the end brighten the whole thing up, and sliced avocado on the side adds healthy fats that round out the meal beautifully. It comes together in one cast iron skillet, which means cleanup is minimal and the whole thing goes straight from stove to table.

Heat 2 tbsp of the olive oil in a 12-inch cast iron skillet over medium-high heat until shimmering. Add the sweet potato cubes in a single layer, season with ¼ tsp of the salt, and cook undisturbed for 5 minutes, until the undersides are golden and beginning to crisp. Stir and continue cooking for another 5–6 minutes, stirring occasionally, until the cubes are tender when pierced with a fork and browned on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp olive oil to the skillet. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.
