Roasted eggplant makes the perfect edible vessel here — tender, slightly smoky, and rich enough to hold a hearty filling of chickpeas, bulgur, and a boldly spiced tomato mixture. The combination of turmeric, cumin, and smoked paprika does serious heavy lifting, delivering deep, warming flavor while also checking every box for ingredients known to support a low-inflammation approach to eating. Extra virgin olive oil ties it all together, used both for roasting the eggplant and sautéing the aromatics, so every bite carries that satisfying richness without relying on anything processed or inflammatory. A finishing hit of fresh lime juice and a generous handful of cilantro keeps the whole dish bright and lively rather than heavy. The broil at the end is a small step that makes a big difference — it crisps the top of the filling and chars the eggplant edges just enough to add a little drama to the plate. This one serves four, making it a solid weeknight dinner that actually feels like something special.

Preheat the oven to 400°F (205°C). Line a large baking sheet with parchment paper.
Score the cut side of each eggplant half in a crosshatch pattern, cutting about 3/4 inch deep without piercing the skin. Brush the cut sides with 2 tbsp of the olive oil and season with 1/4 tsp of the salt and the black pepper. Place cut-side down on the prepared baking sheet and roast for 25–30 minutes, until the flesh is completely tender when pressed and the skin is slightly wrinkled.
