Bright, herby, and packed with satisfying texture, this salad is the kind of bowl that makes you genuinely excited about eating your greens. Crispy oven-roasted chickpeas seasoned with cumin and smoked paprika sit on top of cool romaine, creamy avocado, cucumber, cherry tomatoes, and red onion — it's a full meal hiding in a salad. The dressing is where everything comes together: fresh lime juice, cilantro, garlic, and honey whisked into extra virgin olive oil for something tangy, bright, and completely homemade. Avoiding industrially processed seed oils can be tricky when store-bought dressings and canned snacks sneak them in everywhere, but every drop of fat in this recipe comes from olive oil and avocado, so you know exactly what you're eating. The chickpeas are roasted on a bare sheet pan with just olive oil and spices, no shortcuts or mystery ingredients required. Optional pumpkin seeds add a satisfying crunch and keep things squarely in whole-food territory. Toss it together while the chickpeas are still warm from the oven and serve right away for the best contrast of textures.

¼ cup pumpkin seeds (pepitas), raw or dry-roasted (optional)
Instructions
1
Preheat the oven to 400°F (205°C). Pat the drained chickpeas thoroughly dry with paper towels — the drier they are, the crispier they will get. Spread them on a baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated.
2
Roast the chickpeas on the baking sheet for 22–25 minutes, shaking the pan once halfway through, until they are golden and crisp on the outside. Remove from the oven and let them rest on the pan for 5 minutes — they will firm up further as they cool.
