Crispy roasted chickpeas, creamy avocado, and a punchy cilantro-lime dressing come together in a salad that genuinely earns its place as a main course. Every component here is naturally free of dairy, so there's no swapping, substituting, or second-guessing ā just bright, bold flavors from start to finish. The chickpeas are the real star: patted dry, tossed with cumin and smoked paprika, and roasted until they turn golden and satisfyingly crunchy, adding the kind of texture you'd normally expect from croutons or cheese. The dressing is a simple whisk of olive oil, fresh lime juice, cilantro, garlic, and a touch of honey ā tangy, herby, and just a little sweet. Crisp romaine, cool cucumber, juicy cherry tomatoes, and thin-sliced red onion give you plenty of crunch and color in every forkful, while the avocado adds richness that makes the whole bowl feel indulgent without a drop of cream or butter. A handful of pumpkin seeds on top is optional but highly recommended for that extra nutty bite. This is the kind of salad that converts skeptics ā the ones who think salad can't be a real meal ā on the very first bowl.

¼ cup pumpkin seeds (pepitas), raw or dry-roasted (optional)
Instructions
1
Preheat the oven to 400°F (205°C). Pat the drained chickpeas thoroughly dry with paper towels ā the drier they are, the crispier they will get. Spread them on a baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated.
2
Roast the chickpeas on the baking sheet for 22ā25 minutes, shaking the pan once halfway through, until they are golden and crisp on the outside. Remove from the oven and let them rest on the pan for 5 minutes ā they will firm up further as they cool.
