Bright, zesty, and loaded with texture, this salad is the kind of bowl that actually makes you feel good from the inside out. Crispy oven-roasted chickpeas seasoned with cumin and smoked paprika bring a satisfying crunch, while creamy avocado, cool cucumber, and juicy cherry tomatoes keep every bite fresh and balanced. The cilantro-lime dressing ties it all together with a punchy, herbaceous kick that's made entirely from whole, recognizable ingredients — no mystery additives, no processed shortcuts. Romaine hearts form a sturdy, fiber-rich base that holds up beautifully under the dressing without wilting, making this a genuinely nourishing choice for anyone paying attention to digestive wellness. The combination of plant-based protein from chickpeas, healthy fats from olive oil and avocado, and prebiotic-friendly garlic and onion means this dish is doing real work beyond just tasting great. Pumpkin seeds scattered on top add an optional but welcome boost of magnesium and extra crunch. It comes together easily and hits that rare sweet spot of being both genuinely delicious and something your gut will thank you for.

Preheat the oven to 400°F (205°C). Pat the drained chickpeas thoroughly dry with paper towels — the drier they are, the crispier they will get. Spread them on a baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated.
Roast the chickpeas on the baking sheet for 22–25 minutes, shaking the pan once halfway through, until they are golden and crisp on the outside. Remove from the oven and let them rest on the pan for 5 minutes — they will firm up further as they cool.
