Crispy roasted chickpeas, creamy avocado, and a punchy cilantro-lime dressing come together over a bed of cool romaine for a salad that genuinely earns its place as a main course. The chickpeas get patted completely dry before hitting a hot oven with cumin and smoked paprika, which is what gives them that satisfying crunch that holds up even after you dress the bowl. Many bold, zesty salads lean on ginger as a shortcut to brightness, but this one builds all its flavor from fresh lime juice, garlic, honey, and a generous handful of cilantro — no ginger required, and nothing feels missing. The dressing is whisked together in minutes while the chickpeas roast, so the whole thing comes together with very little fuss. Cherry tomatoes, cucumber, and thin-sliced red onion add color and crunch at every bite, while optional pumpkin seeds bring a nutty finish if you want a little extra texture. It's the kind of salad that looks impressive enough for company but is honestly easy enough for a weeknight when you just want something fresh and satisfying.

Preheat the oven to 400°F (205°C). Pat the drained chickpeas thoroughly dry with paper towels — the drier they are, the crispier they will get. Spread them on a baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated.
Roast the chickpeas on the baking sheet for 22–25 minutes, shaking the pan once halfway through, until they are golden and crisp on the outside. Remove from the oven and let them rest on the pan for 5 minutes — they will firm up further as they cool.
