Bright, zesty, and loaded with texture, this romaine and chickpea salad is the kind of bowl that makes you genuinely excited about eating your greens. The star of the show is the oven-roasted chickpeas ā tossed in cumin and smoked paprika, then crisped until golden ā which add a satisfying crunch that keeps every bite interesting. The dressing is where things really shine: fresh lime juice, chopped cilantro, garlic, and honey whisked together with extra virgin olive oil into something vibrant and completely clean. No stabilizers, no lecithin, no mystery additives ā just real ingredients doing all the work. That matters more than it sounds, because so many bottled dressings rely on emulsifying agents to hold their texture, and this one skips all of that without sacrificing a single drop of flavor. Creamy diced avocado, crisp cucumber, juicy cherry tomatoes, and a scatter of pumpkin seeds round out the bowl with color and richness. It comes together easily and tastes like something you'd order at a restaurant, except you know exactly what went into it.

¼ cup pumpkin seeds (pepitas), raw or dry-roasted (optional)
Instructions
1
Preheat the oven to 400°F (205°C). Pat the drained chickpeas thoroughly dry with paper towels ā the drier they are, the crispier they will get. Spread them on a baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated.
2
Roast the chickpeas on the baking sheet for 22ā25 minutes, shaking the pan once halfway through, until they are golden and crisp on the outside. Remove from the oven and let them rest on the pan for 5 minutes ā they will firm up further as they cool.
