Millet is the unsung hero of the grain world, and this bright, satisfying salad is proof that skipping rice doesn't mean settling for less. Fluffy, toasted-gold millet forms the base, soaking up a punchy lime and cumin dressing that hits every note — tangy, earthy, and just a little spicy if you go for the cayenne. Chickpeas bring hearty protein and substance, while crisp cucumber, juicy cherry tomatoes, and red onion keep every bite fresh and lively. Creamy avocado is folded in at the end so it stays in beautiful chunks rather than disappearing into the mix. The turmeric and lime zest in the dressing give the whole bowl a golden glow and a citrus brightness that makes it feel anything but plain or safe-eating boring. It works beautifully as a standalone lunch, a potluck showstopper, or a meal-prep staple that holds up well in the fridge. This is the kind of recipe that makes you wonder why you ever needed rice in the first place.

Rinse the millet in a fine-mesh strainer under cold running water until the water runs clear, about 30 seconds. Transfer to a medium saucepan with 2 cups water and 1/4 tsp salt. Bring to a boil over medium-high heat, then reduce to a low simmer, cover, and cook until the water is fully absorbed and the millet is tender and fluffy, about 18 minutes.
Remove the saucepan from the heat and let the millet rest, covered, for 5 minutes, then uncover and fluff with a fork. Spread the millet onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes until no longer steaming.
