Briny, bright, and loaded with bold aromatics, these marinated olives are the kind of effortless appetizer that looks far more impressive than the work involved. A quick warm bath of extra-virgin olive oil with sliced garlic, fresh ginger, lime zest, and a whisper of turmeric coaxes out deep, layered flavor before the whole thing gets poured over your olives to slowly work its magic. Fresh cilantro and a squeeze of lime juice finish things off with a herby, citrusy punch that keeps every bite lively. Because the marinade is built entirely from whole, recognizable ingredients, there are no thickeners, stabilizers, or additives to worry about — just pure, clean flavor from things you can actually pronounce. Many store-bought marinated olives rely on emulsifiers or mystery "natural flavors" that can be hard to vet, so making your own puts you fully in control. After just an hour at room temperature, the olives soak up all that garlicky, gingery goodness and are ready to serve straight from the jar. Set them out at a dinner party, tuck them into a cheese board, or snack on them straight — they disappear fast either way.

Combine the olive oil, garlic, ginger, lime zest, turmeric, and salt in a small saucepan over medium-low heat. Warm, stirring occasionally, until the garlic is fragrant and just beginning to turn golden at the edges, about 3–4 minutes. Remove from heat and let cool for 5 minutes.
Place the drained olives in a jar or airtight container. Pour the warm oil mixture over the olives, then add the lime juice and cilantro (and parsley, if using). Stir gently to coat.
