Bright, zesty, and deeply satisfying, this bowl is the kind of meal that makes eating well feel genuinely exciting rather than like a compromise. The marinade layers turmeric, cumin, and smoked paprika over bone-in chicken thighs — and that combination isn't just for flavor. Turmeric and extra virgin olive oil are two of the most well-researched ingredients in the anti-inflammatory space, and here they show up in every component of the dish. Farro brings a hearty, nutty chew that holds up beautifully under the roasted cauliflower and golden-skinned chicken, while the fresh cilantro-lime dressing ties everything together with a hit of brightness that makes the whole bowl pop. Everything roasts on a single sheet pan, so the effort is minimal even though the result looks and tastes like something you'd order at a serious grain bowl restaurant. A few slices of avocado on top round out the healthy fats and add a creamy contrast to the caramelized cauliflower edges. This one serves four, making it a smart choice for meal prep or a weeknight dinner that actually gets people excited to sit down.

Place the chicken thighs in a shallow dish or zip-top bag, pour the marinade over them, and turn to coat. Marinate at room temperature for 30 minutes, or refrigerate for up to 8 hours.
When ready to cook, preheat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment or foil.
