This vibrant, colorful salad is everything you want in a warm-weather bowl — bright citrus, creamy avocado, hearty black beans, and a gentle kick from red pepper flakes, all built on a base of lightly sautéed cauliflower rice. Every single ingredient here is whole and recognizable, which matters a lot when you're avoiding synthetic preservatives and hidden chemical additives that sneak into so many packaged and processed foods. Fresh lime juice and zest do the heavy lifting in the dressing alongside olive oil, cumin, and turmeric, so there's no need for bottled condiments or shelf-stable shortcuts that could introduce unwanted compounds. The cauliflower gets pulsed in a food processor and cooked just long enough to drive off excess moisture, giving it a satisfying, grain-like texture without any of the starchiness of actual rice. Folding in the avocado at the end keeps it buttery and intact rather than mushy, making every bite feel intentional and fresh. It comes together in one bowl with minimal fuss, and it holds up well in the fridge for a short rest if you want to get ahead — just add the avocado right before serving for the best results.

Working in two batches, pulse the cauliflower florets in a food processor (or grate on the large holes of a box grater) until broken down into rice-sized pieces, about 8–10 pulses per batch. You should have about 4 cups of cauliflower rice.
Heat 1 tbsp of the olive oil in a large skillet over medium-high heat until shimmering. Add the cauliflower rice, salt, and black pepper and cook, stirring occasionally, until the cauliflower is just tender and any excess moisture has evaporated, about 5–7 minutes. Spread onto a large plate or sheet pan and let cool for 10 minutes.
