Bright, zesty, and loaded with color, this cauliflower rice salad is the kind of dish that makes eating well feel genuinely exciting rather than like a compromise. Riced cauliflower is lightly sautéed to drive off excess moisture before it gets tossed with a cumin-and-turmeric lime dressing, giving every bite a warm, earthy depth that pairs beautifully with the fresh cilantro and crisp red bell pepper. Black beans and corn add satisfying substance, while creamy diced avocado and a hit of lime zest keep things feeling light and vibrant. The green tops of the scallions are used here rather than the bulb, a small but thoughtful detail that makes this easier on a sensitive digestive system without sacrificing any of that fresh, savory flavor. Turmeric and cumin both bring natural anti-inflammatory properties to the dressing, so the seasoning is doing double duty — tasting great and supporting your gut at the same time. It comes together in one large bowl after a quick stovetop step, making cleanup minimal and the whole process surprisingly low-stress. Whether you serve it right away or let it chill for an hour, it holds up beautifully and tastes even more cohesive as the dressing soaks in.

Working in two batches, pulse the cauliflower florets in a food processor (or grate on the large holes of a box grater) until broken down into rice-sized pieces, about 8–10 pulses per batch. You should have about 4 cups of cauliflower rice.
Heat 1 tbsp of the olive oil in a large skillet over medium-high heat until shimmering. Add the cauliflower rice, salt, and black pepper and cook, stirring occasionally, until the cauliflower is just tender and any excess moisture has evaporated, about 5–7 minutes. Spread onto a large plate or sheet pan and let cool for 10 minutes.
