This bright, colorful bowl is everything you want in a warm-weather salad — fresh, filling, and packed with bold flavor from every angle. Cauliflower gets pulsed down to tender little grains, then tossed with black beans, sweet corn, crisp red bell pepper, and creamy avocado for a dish that genuinely satisfies. The dressing is a punchy lime vinaigrette with cumin and turmeric that ties it all together without relying on any warming spices that might cause issues. So many Latin-inspired recipes lean heavily on ginger, but this one skips it entirely and still delivers serious depth and brightness. The green onion tops and a generous handful of fresh cilantro keep things herbaceous and light, while the optional red pepper flakes give you just enough heat if you want it. It works beautifully as a make-ahead lunch, a cookout side, or a quick weeknight dinner that feels anything but boring.

Working in two batches, pulse the cauliflower florets in a food processor (or grate on the large holes of a box grater) until broken down into rice-sized pieces, about 8–10 pulses per batch. You should have about 4 cups of cauliflower rice.
Heat 1 tbsp of the olive oil in a large skillet over medium-high heat until shimmering. Add the cauliflower rice, salt, and black pepper and cook, stirring occasionally, until the cauliflower is just tender and any excess moisture has evaporated, about 5–7 minutes. Spread onto a large plate or sheet pan and let cool for 10 minutes.
