This vibrant, veggie-packed salad is exactly the kind of meal that feels light and refreshing while still delivering real staying power. Cauliflower rice forms the base — pulsed in a food processor and lightly sautéed until tender — then tossed with black beans, corn, red bell pepper, creamy avocado, and a bright cilantro-lime dressing that ties everything together beautifully. The black beans bring a solid hit of plant-based protein and fiber, while the avocado adds the kind of healthy fats that are genuinely valuable during the postpartum and nursing period. Turmeric and cumin in the dressing give it a warm, earthy depth without overwhelming the fresh citrus notes. Green onion tops keep the flavor mild and easy on the stomach, which is a thoughtful swap when you're paying attention to what you're eating for both yourself and your baby. The whole thing comes together in one bowl with no complicated techniques, making it a realistic option even on the busiest days. It holds up well in the fridge for a short while, so you can prep it ahead and have something nourishing ready to grab between feeds.

Working in two batches, pulse the cauliflower florets in a food processor (or grate on the large holes of a box grater) until broken down into rice-sized pieces, about 8–10 pulses per batch. You should have about 4 cups of cauliflower rice.
Heat 1 tbsp of the olive oil in a large skillet over medium-high heat until shimmering. Add the cauliflower rice, salt, and black pepper and cook, stirring occasionally, until the cauliflower is just tender and any excess moisture has evaporated, about 5–7 minutes. Spread onto a large plate or sheet pan and let cool for 10 minutes.
