This vibrant dip is a showstopper ā roasted beets give it a deep, jewel-toned magenta color that makes any snack spread look like it belongs on a restaurant menu. Fresh cilantro and bright lime juice cut through the earthiness of the beets, while tahini and chickpeas bring that classic creamy, nutty body you want in a great hummus. Streaming in ice water at the end is the little trick that takes the texture from gritty to genuinely silky and smooth. The whole thing comes together in a food processor, so the effort is minimal even though the result looks seriously impressive. Surrounded by crisp carrots, cucumber spears, bell pepper strips, and broccoli florets, it doubles as a complete snack platter that needs nothing else. Since every ingredient here is whole, plant-based, and straightforward, there's no need to scan labels or second-guess what's in it ā just real food that happens to taste incredible.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tsp of the olive oil, and wrap tightly into a packet. Set the packet on a baking sheet and roast until the beets are completely tender when pierced with a knife, 40ā50 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 15 minutes. Unwrap and, once cool enough to handle, rub the skins off with a paper towel or the foil. Cut the beets into rough chunks.
