This vibrant dip is a showstopper ā roasted beets give it a deep, jewel-toned color that makes the whole spread look like something out of a food magazine. Fresh lime juice and a generous handful of cilantro cut right through the earthiness of the beets, while tahini and chickpeas build that rich, creamy base you want in a great hummus. A little ground cumin and optional red pepper flakes round everything out with just enough warmth to keep things interesting. The trick of streaming in ice water at the end is what takes the texture from gritty to genuinely silky and smooth. Surrounded by crisp carrots, cucumber spears, bell pepper strips, and broccoli florets, this is a snack platter that pulls its own weight at any gathering. Every single ingredient here is naturally free from tree nuts, so there's no label-scanning or substitution stress ā just straightforward, delicious food you can set out with total confidence.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tsp of the olive oil, and wrap tightly into a packet. Set the packet on a baking sheet and roast until the beets are completely tender when pierced with a knife, 40ā50 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 15 minutes. Unwrap and, once cool enough to handle, rub the skins off with a paper towel or the foil. Cut the beets into rough chunks.
