Roasted beets give this vibrant hummus its stunning magenta color and a naturally sweet, earthy depth that pairs beautifully with bright lime juice and fresh cilantro. Chickpeas and tahini bring the creamy, protein-rich base you'd expect from a classic hummus, while a drizzle of extra virgin olive oil ties everything together in the most satisfying way. This is exactly the kind of dish that fits effortlessly into a Mediterranean-style way of eating ā built almost entirely on plants, healthy fats, and whole ingredients with nothing processed or out of place. The garlic, cumin, and optional red pepper flakes add just enough warmth and complexity to keep every bite interesting. Surrounding the bowl with fresh carrots, cucumber spears, red bell pepper, and broccoli florets means the whole spread is as nourishing as it is gorgeous ā no sad crackers required. It's the kind of appetizer that disappears fast at a gathering, but it's also humble enough to pull out on a Tuesday afternoon as a snack. Make a batch, keep the veggies prepped, and you'll find yourself reaching for it all week long.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tsp of the olive oil, and wrap tightly into a packet. Set the packet on a baking sheet and roast until the beets are completely tender when pierced with a knife, 40ā50 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 15 minutes. Unwrap and, once cool enough to handle, rub the skins off with a paper towel or the foil. Cut the beets into rough chunks.
