Roasted beets give this vibrant hummus its stunning magenta color and a naturally earthy sweetness that pairs beautifully with bright lime juice and fresh cilantro. The combination is bold and unexpected — nothing like the plain store-bought versions that often sneak in spice blends you'd rather avoid. Because every ingredient here is straightforward and clearly defined, you stay in complete control of what goes into the bowl, which matters when you're navigating hidden seasonings in packaged foods. Tahini and chickpeas bring the creamy, protein-rich base you'd expect from a classic hummus, while the cumin adds just enough warmth without any of the spice blends that can be problematic. Streaming in ice water while the processor runs is the little trick that takes the texture from grainy to genuinely silky and smooth. Served with a rainbow of fresh veggie dippers — carrots, cucumbers, bell pepper, and broccoli — this is a snack spread that looks impressive enough for a party but comes together with minimal fuss. It's the kind of recipe you'll keep coming back to whenever you want something colorful, crowd-pleasing, and completely trustworthy.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tsp of the olive oil, and wrap tightly into a packet. Set the packet on a baking sheet and roast until the beets are completely tender when pierced with a knife, 40–50 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 15 minutes. Unwrap and, once cool enough to handle, rub the skins off with a paper towel or the foil. Cut the beets into rough chunks.
