Earthy roasted beets, creamy avocado, and peppery baby arugula come together in a salad that feels genuinely special without requiring much effort. The whole-food ingredient list is naturally free of rye and any grain-based fillers, so there's no label-scanning or substitution stress — just fresh, clean produce and pantry staples. Roasting the beets low and slow in foil coaxes out their natural sweetness, and once they're cool enough to handle, the skins slip right off without any fuss. The cilantro-lime dressing is whisked together in minutes and does serious heavy lifting — bright citrus, a touch of honey, and warm cumin make every bite pop. Crunchy dry-roasted pepitas scattered over the top add texture and a subtle nuttiness that rounds out the whole bowl. Serve it as a vibrant starter or pile it high as a light main — either way, it disappears fast.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Preheat the oven to 400°F (205°C). Place each beet on a square of aluminum foil, drizzle with 1 tbsp olive oil, and sprinkle with 1/4 tsp salt. Wrap each beet tightly in the foil and arrange on a baking sheet.
Roast the beets until a paring knife slides through the center with no resistance, 40–50 minutes depending on size. Unwrap and let cool for 10 minutes, then rub off the skins using the foil or a paper towel. Cut into 1/2-inch wedges.
