Deeply roasted hazelnuts are the whole point here — spending time in a hot oven until fragrant and deep golden, then rubbed free of their papery skins before getting whipped in the food processor into a glossy, fluid butter all on their own. That patient grinding process is what turns raw nuts into something pourable and rich, no shortcuts needed. From there it's blended with unsweetened cocoa powder, a touch of neutral oil for that silky finish, and a warm hit of vanilla and salt to round out the flavor. The result is a deeply chocolatey, nutty spread with a smooth, glossy texture that firms up beautifully once it cools in the jar. It's an easy homemade favorite to keep stocked for toast, spoons, or straight-up snacking, and a solid pick for anyone steering clear of added sugar. Simple pantry staples, real roasted hazelnut flavor, and total control over what goes into the jar — that's the appeal.

Preheat the oven to 350°F (175°C). Spread the hazelnuts in a single layer on a baking sheet and roast for 12–14 minutes, until the skins are cracked and the nuts are deep golden brown and fragrant.
Transfer the hot hazelnuts onto a clean kitchen towel, fold the towel over them, and rub vigorously for about 1 minute until most of the papery skins have come off. It is fine if a little skin remains. Let the nuts cool for 15–20 minutes until no longer warm to the touch.
