Silky and rich, this pâté gets its luxurious texture from perfectly seared chicken livers blended with golden, slow-cooked onion, garlic, and a fragrant mix of thyme and rosemary. Coconut oil and coconut cream bring the smoothness you want in a great pâté, while a splash of apple cider vinegar and a hit of turmeric and ginger add depth and warmth to every bite. Pressing the mixture through a fine-mesh strainer takes it to that ultra-velvety, spreadable consistency that makes this dish feel special. Chilled until firm and finished with fresh parsley, it's the kind of make-ahead appetizer that looks impressive with almost no last-minute effort. Serve it with cassava crackers or crisp cucumber slices for a starter that fits neatly into a dairy free spread. This one's an easy way to bring a bit of classic French bistro flavor to your table without any fuss.

Pat the chicken livers dry with paper towels. Heat 2 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering. Add the livers in a single layer — do not crowd the pan — and sear undisturbed for 2–3 minutes until the undersides are deep brown and release easily from the pan.
Flip the livers and cook for another 2–3 minutes until the centers are just barely pink when you cut into the thickest one and an instant-read thermometer inserted into the thickest liver reads 165°F (74°C). Transfer the livers to a plate and set aside.
