Pour the chicken broth into a large saucepan and bring to a gentle boil over medium-high heat. Add the grated ginger, coconut aminos, sesame oil, and ½ tsp salt, then reduce the heat to medium and simmer for 5 minutes until the broth is fragrant.
Add the sliced chicken breast to the simmering broth. Cook, stirring occasionally, for 6–8 minutes until the chicken is opaque throughout with no pink at the center and registers 165°F (74°C) on an instant-read thermometer.
