Stir-fry nights just got a serious upgrade, and this one is as satisfying as anything you'd order from your favorite takeout spot. The sauce is built on coconut aminos instead of soy sauce, which means it delivers that deep, savory umami punch without a drop of wheat — no label-reading required. Arrowroot starch steps in to thicken everything up into a glossy, clingy coating that hugs every piece of chicken and zucchini beautifully. The high-heat technique is key here: searing the chicken undisturbed first builds a golden crust, while the zucchini gets just enough time in the pan to turn tender without going soggy. Fresh ginger and garlic bloom in the hot oil and give the whole dish a fragrant, restaurant-quality backbone that's hard to believe comes together so quickly. Finish it with scallions and a handful of cilantro or parsley, and you've got a colorful, weeknight-friendly bowl that feels anything but like a compromise.

In a small bowl, whisk together the coconut aminos, apple cider vinegar, arrowroot starch, turmeric, and 1/2 tsp salt until the starch is fully dissolved and no lumps remain. Set aside.
Heat 2 tbsp of the coconut oil in a large (12-inch) skillet or wok over high heat until shimmering and just beginning to smoke. Add the chicken in a single layer and cook undisturbed for 3 minutes, until the underside is golden. Flip and cook for another 2–3 minutes, until the chicken is opaque throughout with no pink at the center and reaches 165°F (74°C) on an instant-read thermometer. Transfer to a plate.
