This vibrant stir-fry is the kind of weeknight dinner that looks and tastes like you put in way more effort than you actually did. Tender golden chicken, silky zucchini, and a glossy, savory sauce come together in one skillet for something genuinely craveable. The sauce is where the magic happens — coconut aminos stand in for soy sauce with zero wheat involved, and arrowroot starch thickens everything into that glossy, restaurant-style finish without a trace of gluten. Fresh ginger and garlic hit the pan at just the right moment, filling your kitchen with an aroma that makes it hard to wait for dinner. Coconut oil gives the chicken a beautiful sear at high heat, locking in juiciness before the vegetables even hit the pan. A handful of scallions and fresh herbs on top add brightness and color that make the whole bowl feel a little special. It's a clean, satisfying meal that proves eating this way never has to mean settling for less flavor.

In a small bowl, whisk together the coconut aminos, apple cider vinegar, arrowroot starch, turmeric, and 1/2 tsp salt until the starch is fully dissolved and no lumps remain. Set aside.
Heat 2 tbsp of the coconut oil in a large (12-inch) skillet or wok over high heat until shimmering and just beginning to smoke. Add the chicken in a single layer and cook undisturbed for 3 minutes, until the underside is golden. Flip and cook for another 2–3 minutes, until the chicken is opaque throughout with no pink at the center and reaches 165°F (74°C) on an instant-read thermometer. Transfer to a plate.
