In a large mixing bowl, combine the yeast, sugar, and warm water. Let stand for 5–8 minutes, until foamy and fragrant.
Add the flour, cornmeal, salt, melted butter, and 1 tbsp of the olive oil to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms, then turn out onto a lightly floured surface and knead for 4–5 minutes, until the dough is smooth and slightly tacky but no longer sticky. Shape into a ball.
