Tart cherries, floral vanilla, and the natural fizz of a second ferment come together in a drink that tastes like something you'd pay way too much for at a boutique wellness café. The process is surprisingly hands-on in the best way — you're cooking down fresh or frozen cherries with raw honey into a jewel-toned syrup, straining it smooth, and then letting the bottled kombucha do its carbonation magic over a day or two on the counter. Vanilla powder (not extract) keeps the flavor clean and fully dissolved, which matters both for taste and for keeping the ingredient list straightforward. Many flavored kombuchas on store shelves sneak in spice blends or anti-inflammatory add-ins that can be hard to spot on a label, so brewing your own second ferment at home puts you completely in control of what goes in the bottle. The 24-to-48-hour fermentation window gives you a genuinely effervescent result — firm bottles, a satisfying hiss when you crack one open, and a deep ruby pour that looks stunning in a glass. Chill it down before serving and strain if you want that crystal-clear finish, or leave it a little rustic. Either way, it's a refreshing, fruit-forward brew with zero guesswork about hidden ingredients.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
