Tart cherries, raw honey, and a whisper of vanilla transform plain kombucha into something that tastes like it came from a boutique fermentation bar ā except you made it yourself. The process is genuinely satisfying: you cook down the cherries into a jewel-bright syrup, bottle everything up, and let time and natural carbonation do the rest. Every single ingredient here is exactly what it sounds like, with no hidden vegetable oils, emulsifiers, or mystery additives that sneak into so many commercial flavored drinks. That matters more than people realize ā plenty of store-bought kombuchas and flavored beverages use seed oil-derived ingredients in their flavorings or processing aids, so brewing your own second ferment is a clean, confident alternative. The 24-to-48-hour countertop fermentation builds real effervescence, and the result is a fizzy, fruit-forward drink with a deep, slightly tart backbone and a warm vanilla finish. Chill it down, pour it slow, and it's honestly impressive enough to serve to guests who would never guess how simple the whole thing was.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5ā7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
