Tart cherries, floral vanilla, and the natural fizz of a second ferment come together in a drink that tastes like something you'd pay way too much for at a specialty café. The process starts with a quick honey-and-cherry syrup cooked down on the stovetop, then strained smooth and spiked with vanilla powder before it ever meets the kombucha. That syrup gets bottled up with plain kombucha and left to carbonate at room temperature for a day or two, building the kind of effervescence that makes every pour feel a little celebratory. Burping the bottles at the 24-hour mark keeps the pressure in check, and once they hit the fridge, fermentation slows so you're left with a perfectly balanced, lightly sweet brew. Every ingredient here is naturally grain-free and rice-free, so there's no label-scanning or substitution gymnastics required — just clean, whole-food components doing exactly what they're supposed to do. Serve it straight from the bottle over ice or strain it into a glass for a cleaner, jewel-toned pour that looks as good as it tastes.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
