Tart cherries, floral honey, and a whisper of vanilla transform plain kombucha into a fizzy, jewel-toned drink that tastes like something you'd pay way too much for at a specialty café. The process is surprisingly hands-on in the best way — you're cooking down fresh or frozen cherries into a glossy syrup, straining it smooth, and then letting the bottled kombucha do its slow, satisfying carbonation magic over a day or two. That second ferment is where the real alchemy happens, building natural bubbles and deepening the flavor until each bottle is firm and pressurized and ready to pop. Store-bought flavored kombuchas can be a minefield of unexpected add-ins, so brewing your own means you know exactly what's in every sip. The four-ingredient syrup is completely free of nuts and nut-derived ingredients, making this a genuinely worry-free batch to mix up. Serve it ice-cold straight from the fridge, and if you want that gorgeous ruby clarity in the glass, a quick pour through a fine-mesh strainer does the trick beautifully.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
