Tart cherries, floral vanilla, and the natural fizz of a second ferment come together in a drink that tastes like something you'd pay way too much for at a specialty café. The process is straightforward: a quick honey-and-cherry syrup gets strained smooth, blended with vanilla powder, and bottled up with plain kombucha to carbonate over a day or two at room temperature. Because every ingredient here is whole and unprocessed, you sidestep the preservatives and curing agents that make so many bottled beverages off-limits for people avoiding nitrates and nitrites. Store-bought flavored kombuchas and fruit drinks can be surprisingly tricky — natural flavors and color additives sometimes bring unwanted compounds along for the ride, so brewing your own is genuinely the cleaner move. The raw honey adds just enough sweetness to balance the tartness of the cherries without tipping the whole thing into dessert territory. Watching those bottles firm up on the counter as carbonation builds is oddly satisfying, and the payoff — a cold, ruby-red, effervescent glass — is absolutely worth the wait.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
