Tart cherries, floral vanilla, and the natural fizz of a second ferment come together in a drink that tastes like something you'd pay serious money for at a specialty café. The process is genuinely simple — a quick honey-and-cherry syrup gets strained smooth, stirred with vanilla powder, and bottled up with plain kombucha to carbonate over a day or two on your counter. What makes this especially satisfying is that every single ingredient is naturally free of nightshades, so there's no label-scanning or substitution gymnastics required. Kombucha can sometimes feel off-limits when flavored store-bought versions sneak in unexpected additives, but making your own second ferment puts you completely in control. The tart cherry juice gives the finished drink a gorgeous deep ruby color and a bright, slightly sour edge that plays beautifully against the warm sweetness of honey and vanilla. Burping the bottles at the 24-hour mark keeps the carbonation from going overboard, and chilling them before serving locks in that perfect effervescent pop. It's the kind of homemade drink that genuinely impresses people — and you'll want a bottle in the fridge at all times.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
