Tart cherries, floral honey, and a whisper of vanilla transform plain kombucha into something that tastes like it came from a boutique fermentation bar. The process is surprisingly hands-on and satisfying ā you cook down the cherries into a jewel-bright syrup, strain it smooth, and let the natural carbonation do its thing right on your countertop. Many flavored kombucha drinks on store shelves sneak in gelatin-based fining agents or other animal-derived additives, so brewing your own second ferment is a smart way to stay in control of exactly what goes into the bottle. Every ingredient here is straightforward and plant-based, with no hidden surprises. The 24-to-48-hour countertop fermentation builds real effervescence, so when you crack one open you get that satisfying hiss and a genuinely fizzy pour. Chilled and strained into a glass, it's the kind of drink that looks and tastes far more impressive than the effort involved.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5ā7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
